Hello there all my clubhouse members and website friends! Welcome to 2014! And a happy New year to ALL of you!
Well, 2014's here, and may I wish you a Happy New Year! Last night I got in bed and watched the ball drop in Times Square and then sang Auld Lang Syne. Before I went to sleep, I spent a few minutes looking over my New Year's Resolutions. I`m going to be very, very busy this year, and I'm gonna make time to go over my list every day to keep me focused!
I plan to spend more time at home this month. I'll be teaching lots of classes atSlimmons and spending time with my sweet Dalmatian, Hattie.
I didn`t sleep too long last night, because I wanted to get up early to see the first sunrise of 2014, and what a sight! I sat on the porch in a new bathrobe I got for Christmas and waited patiently for the big moment, and from the darkness, I saw yellow and orange glows coming up from the horizon. Soon the entire sky was lit up with brilliant rays of color, and then the sun appeared and began to move upwards. It looked like a big egg yolk or a balloon smiling at me, and soon I could feel the sun beaming on my face. A sunrise signifies so many things. It`s the beginning of a new and exciting day filled with hope!
I have a lot of hopes for you this year. I hope you take good care of your body. I hope you nourish it properly and keep it in tip top shape. I hope you take care of your mind. Feed it with positive thoughts, knowledge, and dreams.
I hope you surround yourself with happy, fun people who love you unconditionally. I hope you can work out any problem that comes your way. I hope you will always stand up for yourself and protect your honor and dignity.
I hope you find joy in your job. I hope you have less stress this year. I hope you take more time out to do more things for you.
I hope you find peace. Yes, peace. We all need a little more of that!
And I hope you know how grateful I am that I get to be in your life and guide you to find harmony in your existence.
You know I can't leave you without giving you a recipe... so here's my recipe for minestrone!
(For 8 people)
1 Cooking spray
1 chopped carrot
1 chopped celery stalk
1 large onion, chopped
1 sliced zucchini
1 tsp dried Italian seasoning
2 bay leaves
1/2 tsp pepper
3 cups reduced sodium chicken broth
28 oz. no salt added, crushed tomatoes
15 oz can navy beans, drained
1 C cooked whole wheat, mini pasta shells
2 TBS Parmesan cheese
Spray cooking spray in a large pot and heat. Sautee carrots, celery and onion, until onion is light brown.
Add zucchini, Italian seasoning, bay leaves, pepper, chicken broth, crushed tomatoes and beans. Cook on medium heat for about 45 minutes.
Remove bay leaves, add cooked pasta and Parmesan cheese and serve.
Nutritional Info: 133 calories, 8 gm protein, 25 gm carbohydrate, .9 gm fat, 6.4 mg cholesterol, 646 mg sodium

Tip: Chick peas, kidney beans or black beans work well in place of the navy beans. For making a vegetarian dish, you can substitute vegetable broth for the chicken broth.
