Vegetable Soup

All Veggie Vegetable Soup
(For 6 people)
chicken broth
1 cooking spray
2 Tb minced garlic
1 large chopped Spanish onion
2 stalks chopped celery
2 cups chopped washed escarole
2 diced tomatoes
1 zucchini chopped into 0.25 “ pieces
pepper to taste
2 tsp dried oregano
1/4 cup fresh chopped parsley
Spray cooking spray in a large pot and heat.
Add garlic and sauté; then add onion and celery and sauté 3 minutes.
Add escarole, tomatoes, and zucchini and sauté 2 minutes more. Add chicken stock and bring to a boil.
Lower to simmer. Add all seasonings and parsley and cook 15-30 minutes to allow the flavors to combine.
Add other veggies as desired. Thyme, rosemary, and basil work great in place of the oregano as well. To wash escarole, separate and soak in a large bowl, then discard water and soak again.
