Lentil Soup

Lentil Soup

(For 4 people )
 
 
  • 1  Cooking spray
  • 1  Cup chopped onions
  • 1/2  Cup chopped celery
  • 2  Chopped carrots
  • 2  Tb Minced garlic
  • 1/2  tsp Ground cumin
  • 1/2  tsp Salt
  • 1/2  tsp Pepper
  • 1  Pkt artificial sweetener
  • 2  Tb Tomato paste
  • 2  Bay leaves
  • 16  oz Low sodium beef broth
  • 1  Cup of water
  • 1  Cup of lentils
  1. In a medium saucepan, spray with cooking spray and saute', onions, celery, carrots, and garlic until onions are translucent. (if pan is too dry add a Tb of water)
  2. Add the rest of the spices and tomato paste and heat for 2 - 3 minutes.
  3. Add all other ingredients and cook for 30 - 50 minutes until the lentils are soft.
  4. (Add additional water if needed.)

Lentils come in other colors like red and yellow, and each has its own flavor and texture. When soup is cooked you can add additional seasoning like; garlic powder, onion powder, pepper, vinegar, hot sauce or artificial sweetener to taste. If you want a vegetarian version of our lentil soup you can substitute low sodium vegetable broth for the beef broth.
