Barbecued Pork Meal

 

For 4 people 

Recipe

  • for Pork:
  • 8 oz boneless lean pork tenderloins
  • 1  Tb Olive oil
  • 1  Tb Light soy sauce
  • 1  Dash pepper
  • 1  tsp Hot sauce
  • 2  tsp Sugar
  • 2  Tb Low-sodium barbeque sauce
  • 2  Tb Hoison sauce
  • for sides:
  • 2  Cups corn nibblets
  • 4  Cups steamed green beans
  • 0.5 Cup servings of sugar-free , fat-free chocolate pudding
  1. To prepare pork, marinate pork in olive oil, soy sauce, pepper, hot sauce  and sugar, in the refrigerator for about ½ hour.
  2. On a hot grill cook the pork tenderloins on both sides until just cooked through.
  3. Slice pork into ¼ “ slices on an angle and layer across 4 dinner plates.
  4. Mix together the barbeque and hoison sauce and drizzle over pork.
  5. Serve each person one piece of pork with ½ cup corn nibblets, 1 cup steamed green beans, and ½ cup sugar-free fat-free pudding

Tip: Pork is cooked when it is sliced and white throughout or the internal temperature measures 160 degrees. If you are on a low sodium diet cut back the salt by leaving out the soy sauce, and hoison sauce, double up on the amount of low sodium barbeque sauce.
