Baby Spinach Salad

Baby Spinach Salad
For 4 people 
2 bags baby spinach (about 6-8 cups)
6 hard boiled egg whites cut into quarters
1 cup sliced mushrooms
2 chopped scallions
1 cup cherry tomatoes
2 oz chopped low fat Swiss cheese, cut into 1" pieces
2 oz lean deli ham, cut into 1" pieces
1/2 slice whole wheat bread
1 cooking spray
1/2 tsp garlic powder
1/2 tsp onion powder
2 Tb Parmesan cheese
Preheat oven to 350.
Mix together spinach, egg whites, mushrooms, and scallions.
Cut bread into 1" squares and spray with cooking spray, and then sprinkle with garlic and onion powder. Toast in oven about 5 minutes, turning them to brown.
Top salad with Swiss, ham, croutons, and sprinkle with Parmesan cheese.
Serve with your favorite fat-free dressing.
Additional Information
This salad is very satisfying and full of flavor. Homemade croutons keep well in a small freezer bag for about 1 week.
