St. Paddy's Day Salad

Green Goddess Saint Paddy's Day Salad


(for 2 people)

  • 4  cups mixed greens
  • 4  cups baby spinach
  • 1  peeled chopped cucumber
  • 2  chopped green onions
  • 1  shredded green zucchini
  • 1  shredded green apple
  • 4  Tb fat-free dressing
  • 2  Tb lite mayo
  • 4  Tb finely chopped parsley
  • 2  Tb Balsamic vinegar
  1. Mix greens, cucumber and onion together in larger bowl.
  2. Mix together shredded zucchini and apple and place in middle of salad.
  3. Process dressing ingredients together in food processor till smooth.
  4. Pour dressing over top of salad and serve.

This salad is light crisp and delicious. Lite store bought dressing can be used instead of homemade, pick your favorite flavor.
